- 1 3/4 cups eggnog
- 2 cups all-purpose flour
- 1/4 cup melted butter
- 2 large eggs
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat your waffle maker according to the manufacturer’s instructions.
- In a large bowl, combine melted butter, eggnog, and eggs. Stir until fully combined, then add sugar and mix again.
- In a medium bowl, whisk together flour, baking powder, and nutmeg until evenly mixed.
- Pour the dry ingredients into the wet mixture and gently stir until just combined; some small lumps are okay.
- Lightly grease the waffle maker. Scoop batter onto the waffle maker and cook according to the manufacturer’s instructions, usually about 4 minutes, until golden and crisp.
- Remove the waffles and serve warm with butter, maple syrup, and an extra sprinkle of nutmeg.
Notes
For vegan options, substitute eggnog with plant-based eggnog and use flax eggs. Additional spices can be added based on preference.
