Description

These buttery, spiced Eggnog Cookies with Cinnamon bring holiday warmth to every bite. A delightful fusion of eggnog and classic spice cookies, ideal for festive gatherings.


Ingredients

  • 1 cup cake flour
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/4 cup eggnog
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup powdered sugar (for glaze)
  • 6 tbsp eggnog (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl or stand mixer fitted with a paddle attachment, beat the butter, granulated sugar, and light brown sugar on high speed for about 2-3 minutes until fluffy.
  3. Mix in the egg and vanilla extract, then stir in ¼ cup of eggnog until smooth.
  4. In a separate bowl, whisk together cake flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet mixture, stirring until fully combined.
  5. Scoop tablespoons of dough onto the baking sheet, spacing them evenly.
  6. Bake for about 10 minutes, or until the edges turn a light brown.
  7. Flatten cookies slightly with a measuring cup while they are warm.
  8. For the glaze, mix powdered sugar with eggnog until smooth and drizzle over cooled cookies.
