A hearty and flavorful vegetarian lasagna packed with fresh vegetables and rich cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, chopped
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain and set aside.
- Heat olive oil in a pan, then add garlic, zucchini, and bell pepper; sauté until tender.
- Add chopped spinach, oregano, salt, and pepper; cook until spinach is wilted.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta cheese, sautéed vegetables, mozzarella, and a layer of marinara sauce.
- Repeat the layers, ending with a layer of noodles topped with marinara sauce and parmesan cheese.
- Bake for 30 minutes, until bubbly and golden.
- Let sit for 10 minutes before slicing and serving.
Notes
For extra flavor, add fresh basil or Italian seasoning.
