Description

A hearty and flavorful vegetarian lasagna packed with fresh vegetables and rich cheese.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a pan, then add garlic, zucchini, and bell pepper; sauté until tender.
  4. Add chopped spinach, oregano, salt, and pepper; cook until spinach is wilted.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta cheese, sautéed vegetables, mozzarella, and a layer of marinara sauce.
  7. Repeat the layers, ending with a layer of noodles topped with marinara sauce and parmesan cheese.
  8. Bake for 30 minutes, until bubbly and golden.
  9. Let sit for 10 minutes before slicing and serving.

Notes

For extra flavor, add fresh basil or Italian seasoning.
