Ingredients

- 90 g (1 cup) rolled oats
- 125 g (1/2 cup) peanut butter
- 80 ml (1/3 cup) honey (or maple syrup)
- 25 g (1/4 cup) unsweetened cocoa powder
- 60 g (2 oz) dark chocolate for coating
- 5 ml (1 tsp) vanilla extract
- 1/8 tsp salt
Instructions
- Measure and combine the dry ingredients in a medium bowl, stir together rolled oats and cocoa powder.
- Warm and mix the wet ingredients in a microwave-safe bowl, combining peanut butter and honey.
- Pour the peanut butter mixture over the oat-cocoa mix and fold until evenly combined.
- Use a small cookie scoop or tablespoon to portion dough and roll into tight balls.
- Chill the tray in the refrigerator to set the centers.
- Melt the chocolate and coat each chilled bite.
- Transfer set bites to an airtight container and refrigerate or freeze for storage.
