A quick and flavor-packed Cajun Chicken Jambalaya cooked in a slow cooker, perfect for busy families.


Ingredients

  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Green onions, chopped, for garnish

Instructions

  1. Prep your ingredients by dicing the onions, bell pepper, and celery.
  2. In your slow cooker, combine the diced chicken, chopped onion, bell pepper, celery, garlic, undrained diced tomatoes, rice, chicken broth, Cajun seasoning, paprika, salt, and pepper.
  3. Stir everything until well combined, cover your slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, fluff the rice with a fork and adjust the seasoning if needed. Serve garnished with chopped green onions.

Notes

For deeper flavor, sauté the vegetables for a few minutes before adding to the slow cooker. Adding hot sauce before serving can enhance the dish.
