- 1 pound chicken breast, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup long grain rice
- 2 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon paprika
- Salt and pepper to taste
- Green onions, chopped, for garnish
Instructions
- Prep your ingredients by dicing the onions, bell pepper, and celery.
- In your slow cooker, combine the diced chicken, chopped onion, bell pepper, celery, garlic, undrained diced tomatoes, rice, chicken broth, Cajun seasoning, paprika, salt, and pepper.
- Stir everything until well combined, cover your slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
- Once cooked, fluff the rice with a fork and adjust the seasoning if needed. Serve garnished with chopped green onions.
Notes
For deeper flavor, sauté the vegetables for a few minutes before adding to the slow cooker. Adding hot sauce before serving can enhance the dish.
