- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can diced tomatoes (14.5 ounces)
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- 1 cup cooked pasta (penne or macaroni)
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prep your ingredients by dicing the chicken into bite-sized pieces.
- In the crockpot, combine chicken, chicken broth, diced tomatoes, garlic powder, Italian seasoning, salt, and pepper. Stir to combine.
- Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
- Remove the chicken and shred it using two forks.
- Return the shredded chicken to the crockpot and stir in heavy cream and cooked pasta.
- Cook on high for an additional 30 minutes to enhance creaminess.
- Ladle into bowls and garnish with fresh parsley before serving.
