Description

Deliciously crunchy and savory quinoa patties that are easy to make and customizable for any diet.


Ingredients

Scale
  • 1 cup dry quinoa (rinsed)
  • 2 cups water or stock
  • 1 small onion, finely diced
  • 1 clove garlic, minced
  • 1 cup cooked vegetables or grated carrot (optional)
  • 1/2 cup grated cheese or nutritional yeast (optional)
  • 1 egg (or flax equivalent)
  • 1/2 cup breadcrumbs or panko
  • 23 tbsp flour or chickpea flour (as needed)
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Rinse quinoa under cold water and cook with 2:1 liquid to quinoa until liquid is absorbed, about 15-20 minutes.
  2. Fluff with a fork and cool on a tray for 10-15 minutes.
  3. Sauté onion and garlic until translucent, then combine with cooled quinoa, optional vegetables, cheese, egg, and breadcrumbs. Season and mix, adding flour if too wet.
  4. Form patties using a 1/3-cup measure and chill for 20-30 minutes to firm up.
  5. Cook by pan-frying in a hot skillet for 3-4 minutes per side or air-frying at 375°F for 8-10 minutes, flipping once.
  6. Serve with a squeeze of lemon or yogurt sauce.

Notes

Chill patties before cooking for better crispness. Use high smoke point oils for frying.
