Deliciously crunchy and savory quinoa patties that are easy to make and customizable for any diet.
Ingredients

- 1 cup dry quinoa (rinsed)
- 2 cups water or stock
- 1 small onion, finely diced
- 1 clove garlic, minced
- 1 cup cooked vegetables or grated carrot (optional)
- 1/2 cup grated cheese or nutritional yeast (optional)
- 1 egg (or flax equivalent)
- 1/2 cup breadcrumbs or panko
- 2–3 tbsp flour or chickpea flour (as needed)
- Salt and pepper to taste
- Oil for frying
Instructions
- Rinse quinoa under cold water and cook with 2:1 liquid to quinoa until liquid is absorbed, about 15-20 minutes.
- Fluff with a fork and cool on a tray for 10-15 minutes.
- Sauté onion and garlic until translucent, then combine with cooled quinoa, optional vegetables, cheese, egg, and breadcrumbs. Season and mix, adding flour if too wet.
- Form patties using a 1/3-cup measure and chill for 20-30 minutes to firm up.
- Cook by pan-frying in a hot skillet for 3-4 minutes per side or air-frying at 375°F for 8-10 minutes, flipping once.
- Serve with a squeeze of lemon or yogurt sauce.
Notes
Chill patties before cooking for better crispness. Use high smoke point oils for frying.
