- 2 large sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried herbs (rosemary, thyme or oregano)
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- Juice of 1 lemon
Instructions
- Preheat the oven to 425°F (220°C).
- Peel and cut the sweet potatoes into thin wedges.
- In a bowl, toss the sweet potato wedges with olive oil, garlic powder, dried herbs, salt, and pepper.
- Spread the wedges on a baking sheet in a single layer.
- Bake for 25-30 minutes, flipping halfway, until crispy and golden.
- Meanwhile, combine the mayonnaise, minced garlic, lemon juice, and salt to make the aioli.
- Serve the crispy sweet potatoes hot with garlic lemon aioli on the side.
Notes
For best crispiness, do not overcrowd the baking sheet. Adjust herbs to taste for a customizable dish.
