Description

Deliciously crispy herbed sweet potatoes paired with a tangy garlic lemon aioli. Perfect as a side dish!


Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs (rosemary, thyme or oregano)
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut the sweet potatoes into thin wedges.
  3. In a bowl, toss the sweet potato wedges with olive oil, garlic powder, dried herbs, salt, and pepper.
  4. Spread the wedges on a baking sheet in a single layer.
  5. Bake for 25-30 minutes, flipping halfway, until crispy and golden.
  6. Meanwhile, combine the mayonnaise, minced garlic, lemon juice, and salt to make the aioli.
  7. Serve the crispy sweet potatoes hot with garlic lemon aioli on the side.

Notes

For best crispiness, do not overcrowd the baking sheet. Adjust herbs to taste for a customizable dish.
