An elegant and crispy potato torte flavored with balsamic vinegar and fresh thyme, perfect for any occasion.
Ingredients

- 2 lbs potatoes (Yukon Gold or Russet)
- 3 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme leaves
- 1/2 cup grated Parmesan cheese (optional)
- Fresh thyme sprigs for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Grease a round baking dish with olive oil.
- Thinly slice the potatoes using a mandoline or sharp knife.
- In a large bowl, combine the balsamic vinegar, olive oil, salt, pepper, and fresh thyme.
- Layer the potato slices in the greased baking dish, pour the balsamic mixture over the top, and add cheese if desired.
- Cover with foil and bake for 45 minutes, then uncover and bake for an additional 15-20 minutes.
- Allow to cool slightly, garnish with fresh thyme, and serve.
Notes
Feel free to customize with various herbs or vegetables; can be prepared a day in advance and baked just before serving.
