Description

An elegant and crispy potato torte flavored with balsamic vinegar and fresh thyme, perfect for any occasion.


Ingredients

Scale
  • 2 lbs potatoes (Yukon Gold or Russet)
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves
  • 1/2 cup grated Parmesan cheese (optional)
  • Fresh thyme sprigs for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Grease a round baking dish with olive oil.
  3. Thinly slice the potatoes using a mandoline or sharp knife.
  4. In a large bowl, combine the balsamic vinegar, olive oil, salt, pepper, and fresh thyme.
  5. Layer the potato slices in the greased baking dish, pour the balsamic mixture over the top, and add cheese if desired.
  6. Cover with foil and bake for 45 minutes, then uncover and bake for an additional 15-20 minutes.
  7. Allow to cool slightly, garnish with fresh thyme, and serve.

Notes

Feel free to customize with various herbs or vegetables; can be prepared a day in advance and baked just before serving.
