Description

An impressive and simple dish featuring crispy layers of potatoes coated in balsamic vinegar and fresh thyme.


Ingredients

Scale
  • 2 lbs Yukon Gold or red potatoes
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • 1 clove garlic, minced
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Thinly slice potatoes and soak them in cold water for 30 minutes.
  3. In a mixing bowl, combine balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
  4. Drain and pat dry the potato slices.
  5. Layer the potatoes in a greased baking dish, brushing each layer with the balsamic mixture and sprinkling Parmesan cheese in between layers.
  6. Cover with aluminum foil and bake for 45 minutes, then uncover and bake for an additional 15-20 minutes until golden and crispy.
  7. Allow to cool for a few minutes, slice, and serve.

Notes

For a crispy finish, ensure potatoes are thoroughly dried after soaking. This dish can be made dairy-free by substituting Parmesan with a dairy-free option.
