Description
An impressive and simple dish featuring crispy layers of potatoes coated in balsamic vinegar and fresh thyme.
Ingredients

- 2 lbs Yukon Gold or red potatoes
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tbsp fresh thyme leaves
- Salt and pepper to taste
- 1 clove garlic, minced
- 1 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Thinly slice potatoes and soak them in cold water for 30 minutes.
- In a mixing bowl, combine balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
- Drain and pat dry the potato slices.
- Layer the potatoes in a greased baking dish, brushing each layer with the balsamic mixture and sprinkling Parmesan cheese in between layers.
- Cover with aluminum foil and bake for 45 minutes, then uncover and bake for an additional 15-20 minutes until golden and crispy.
- Allow to cool for a few minutes, slice, and serve.
Notes
For a crispy finish, ensure potatoes are thoroughly dried after soaking. This dish can be made dairy-free by substituting Parmesan with a dairy-free option.
