Description
A quick and delicious creamy soup made with white beans and fresh spinach, brightened with lemon.

- 1 can white beans, drained and rinsed
- 4 cups vegetable broth
- 2 cups fresh spinach, roughly chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Optional: Croutons or yogurt for serving
Instructions
- In a pot, heat olive oil and sauté onion until translucent.
- Add garlic and sauté for 1 minute.
- Stir in beans and broth; bring to a simmer.
- Cook for 10-15 minutes; add spinach and cook until wilted.
- Blend to desired consistency, add lemon juice and zest, then season.
- Serve garnished with croutons or yogurt.
