Description

A quick and delicious creamy soup made with white beans and fresh spinach, brightened with lemon.


Ingredients

Scale
  • 1 can white beans, drained and rinsed
  • 4 cups vegetable broth
  • 2 cups fresh spinach, roughly chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Optional: Croutons or yogurt for serving

Instructions

  1. In a pot, heat olive oil and sauté onion until translucent.
  2. Add garlic and sauté for 1 minute.
  3. Stir in beans and broth; bring to a simmer.
  4. Cook for 10-15 minutes; add spinach and cook until wilted.
  5. Blend to desired consistency, add lemon juice and zest, then season.
  6. Serve garnished with croutons or yogurt.
