- 1 can white beans (cannellini or great northern), drained and rinsed
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional for heat)
- Fresh parsley for garnish (optional)
Instructions
- Prep your ingredients by dicing onions, chopping bacon, and mincing garlic.
- In a large pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove bacon and set aside.
- Add diced onion to the pot and sauté in the bacon grease until translucent, about 5 minutes. Add minced garlic and cook for another minute.
- Stir in white beans and add broth. Bring to a boil, then reduce to a simmer for about 10-15 minutes.
- Use an immersion blender to partially blend the soup until creamy, keeping some beans whole.
- Stir in heavy cream and fresh spinach, letting it wilt for a few minutes. Adjust seasoning with salt, pepper, and red pepper flakes.
- Serve hot, garnished with crispy bacon and parsley if desired.
