Description

A creamy, hearty soup that combines white beans, crispy bacon, and fresh spinach in just 30 minutes, making it the perfect comfort food for the whole family.


Ingredients

  • 1 can white beans (cannellini or great northern), drained and rinsed
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional for heat)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients by dicing onions, chopping bacon, and mincing garlic.
  2. In a large pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove bacon and set aside.
  3. Add diced onion to the pot and sauté in the bacon grease until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  4. Stir in white beans and add broth. Bring to a boil, then reduce to a simmer for about 10-15 minutes.
  5. Use an immersion blender to partially blend the soup until creamy, keeping some beans whole.
  6. Stir in heavy cream and fresh spinach, letting it wilt for a few minutes. Adjust seasoning with salt, pepper, and red pepper flakes.
  7. Serve hot, garnished with crispy bacon and parsley if desired.
