Description

A delicious and nutritious creamy vegetable soup packed with vibrant vegetables and rich flavors, perfect for comfort food lovers.


Ingredients

Scale
  • 2 tbsp Olive Oil or Butter
  • 1 Small Onion, Diced
  • 2 Cloves Garlic, Minced
  • 2 Cups Mixed Vegetables (Carrots, Celery, Potatoes, etc.)
  • 4 Cups Vegetable Broth
  • 1 Cup Heavy Cream or Coconut Milk
  • Salt and Pepper to Taste
  • Fresh Herbs for Garnish (Optional)

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add diced onion and minced garlic; sauté until soft.
  3. Stir in mixed vegetables; cook for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until vegetables are tender.
  6. Blend until smooth using an immersion blender.
  7. Stir in cream, salt, and pepper.
  8. Serve hot, garnished with fresh herbs if desired.
