- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups beef broth
- 1 packet taco seasoning
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the chopped onion and minced garlic; cook until translucent.
- Stir in black beans, corn, diced tomatoes, broth, and taco seasoning. Bring to boil.
- Reduce heat and simmer for 15 minutes.
- Stir in heavy cream, heating through—not boiling.
- Season with salt and pepper; serve warm, garnished with cilantro.
Notes
For a dairy-free option, substitute heavy cream with coconut milk or cashew cream. You can also use ground turkey or chicken for a leaner meat choice.
