Description

A warm, creamy soup brimming with seasoned beef, hearty beans, and vibrant corn, topped with fresh cilantro.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic; cook until translucent.
  3. Stir in black beans, corn, diced tomatoes, broth, and taco seasoning. Bring to boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in heavy cream, heating through—not boiling.
  6. Season with salt and pepper; serve warm, garnished with cilantro.

Notes

For a dairy-free option, substitute heavy cream with coconut milk or cashew cream. You can also use ground turkey or chicken for a leaner meat choice.
