An elegant yet everyday-friendly tart featuring caramelized sweet potatoes and tangy goat cheese, perfect for any gathering.

- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- ¼ cup granulated sugar
- 1 tsp salt
- 3–4 tbsp ice water
- 2 cups sweet potatoes, diced
- 2 tbsp olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh sage, chopped
- 1 tsp thyme leaves
- 1 tsp smoked paprika
- ½ tsp nutmeg, freshly grated
- 2 large eggs
- 1 cup heavy cream
- 6 oz goat cheese, crumbled (reserve 1–2 oz for topping)
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Prepare the dough: In a bowl or food processor, mix flour, sugar, and salt. Cut in butter until crumbly. Add ice water gradually until dough forms. Chill for 30 minutes.
- Blind-Bake the shell: Roll out dough and place in a tart pan. Chill again for 15 minutes. Preheat oven to 375°F (190°C). Blind-bake for 15-20 minutes with weights, then remove weights and bake for an additional 5-7 minutes until lightly golden.
- Roast the sweet potatoes: Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper; roast for 20-25 minutes until tender.
- Sauté aromatics: In a skillet, sauté onion in olive oil until translucent. Add garlic, herbs, and spices, cooking until fragrant.
- Make the filling: Whisk together eggs and cream; season. Fold in sweet potatoes, sautéed mixture, and goat cheese.
- Assemble and bake: Pour filling into the tart shell, topping with reserved goat cheese. Bake at 375°F (190°C) for 35-45 minutes until set.
- Rest and serve: Allow tart to cool before slicing. Serve warm or at room temperature with a salad.
Notes
For a gluten-free option, substitute with almond flour crust. Adjust herbs and cheese for personal touch.
