Description

Ingredients

  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar
  • 1 tsp salt
  • 34 tbsp ice water
  • 2 cups sweet potatoes, diced
  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh sage, chopped
  • 1 tsp thyme leaves
  • 1 tsp smoked paprika
  • ½ tsp nutmeg, freshly grated
  • 2 large eggs
  • 1 cup heavy cream
  • 6 oz goat cheese, crumbled (reserve 12 oz for topping)
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the dough: In a bowl or food processor, mix flour, sugar, and salt. Cut in butter until crumbly. Add ice water gradually until dough forms. Chill for 30 minutes.
  2. Blind-Bake the shell: Roll out dough and place in a tart pan. Chill again for 15 minutes. Preheat oven to 375°F (190°C). Blind-bake for 15-20 minutes with weights, then remove weights and bake for an additional 5-7 minutes until lightly golden.
  3. Roast the sweet potatoes: Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper; roast for 20-25 minutes until tender.
  4. Sauté aromatics: In a skillet, sauté onion in olive oil until translucent. Add garlic, herbs, and spices, cooking until fragrant.
  5. Make the filling: Whisk together eggs and cream; season. Fold in sweet potatoes, sautéed mixture, and goat cheese.
  6. Assemble and bake: Pour filling into the tart shell, topping with reserved goat cheese. Bake at 375°F (190°C) for 35-45 minutes until set.
  7. Rest and serve: Allow tart to cool before slicing. Serve warm or at room temperature with a salad.

Notes

For a gluten-free option, substitute with almond flour crust. Adjust herbs and cheese for personal touch.
