Description

A warm and rich creamy soup that’s quick to prepare, perfect for comfort food lovers.


Ingredients

Scale
  • 1 cup sun-dried tomatoes
  • 1 cup mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 2 cups pasta (small shells or macaroni)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add sliced mushrooms and sun-dried tomatoes, cook until mushrooms are tender.
  3. Pour in vegetable broth and bring to a boil.
  4. Add pasta and cook until al dente.
  5. Lower the heat and stir in the cream. Season with salt and pepper.
  6. Garnish with fresh basil before serving.
