Ingredients

- 1 cup sun-dried tomatoes
- 1 cup mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- 2 cups pasta (small shells or macaroni)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add sliced mushrooms and sun-dried tomatoes, cook until mushrooms are tender.
- Pour in vegetable broth and bring to a boil.
- Add pasta and cook until al dente.
- Lower the heat and stir in the cream. Season with salt and pepper.
- Garnish with fresh basil before serving.
