Description

A comforting and hearty stew made with Italian sausage, potatoes, and greens, perfect for busy weeknights.


Ingredients

  • 1 lb Italian sausage
  • 4 cups diced potatoes (Yukon Gold or Russet)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale or spinach
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot. Brown the sausage for 5-7 minutes.
  2. Add chopped onion and garlic; sauté until translucent (3 minutes).
  3. Stir in potatoes and broth, boil, then simmer until potatoes are tender (15-20 minutes).
  4. Mix in cream and greens; cook for another 5 minutes.
  5. Season to taste and serve warm.
