- 4 cups diced potatoes (Yukon Gold or Russet)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale or spinach
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot. Brown the sausage for 5-7 minutes.
- Add chopped onion and garlic; sauté until translucent (3 minutes).
- Stir in potatoes and broth, boil, then simmer until potatoes are tender (15-20 minutes).
- Mix in cream and greens; cook for another 5 minutes.
- Season to taste and serve warm.

For a dairy-free option, substitute heavy cream with coconut milk. To enhance flavors, allow the stew to sit for 10 minutes before serving.
