A deliciously rich and easy creamy saffron seafood soup, perfect for weeknight dinners or impressing guests.
Ingredients

- 1 lb mixed seafood (shrimp, scallops, fish)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 4 cups fish or seafood broth
- 1/2 cup white wine
- 1/2 tsp saffron threads
- 2 tbsp olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add seafood and cook for a few minutes.
- Pour in white wine and reduce.
- Add broth and saffron, bring to a boil.
- Reduce heat, stir in heavy cream, and simmer for 10 minutes.
- Season with salt and pepper. Serve garnished with parsley.
Notes
Feel free to substitute coconut cream for a dairy-free option.
