Description

A comforting dish combining earthy mushrooms, crispy bacon, and seasonal root vegetables in a creamy gratin.


Ingredients

Scale
  • 2 cups mixed root vegetables (carrots, parsnips, potatoes), peeled and sliced
  • 1 cup mushrooms, sliced (button or cremini)
  • 6 strips of bacon, chopped
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or gruyère)
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a skillet, cook bacon until crispy, then set aside.
  3. Sauté garlic and mushrooms in the bacon fat until mushrooms are golden.
  4. In a bowl, combine root vegetables, bacon, mushrooms, thyme, salt, pepper, cream, and half of the cheese. Mix well.
  5. Pour mixture into the prepared dish and top with remaining cheese.
  6. Bake for 30-35 minutes until golden and bubbly.
  7. Let cool slightly before serving.
