Ingredients

- 2 cups mixed root vegetables (carrots, parsnips, potatoes), peeled and sliced
- 1 cup mushrooms, sliced (button or cremini)
- 6 strips of bacon, chopped
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or gruyère)
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil for greasing
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish with olive oil.
- In a skillet, cook bacon until crispy, then set aside.
- Sauté garlic and mushrooms in the bacon fat until mushrooms are golden.
- In a bowl, combine root vegetables, bacon, mushrooms, thyme, salt, pepper, cream, and half of the cheese. Mix well.
- Pour mixture into the prepared dish and top with remaining cheese.
- Bake for 30-35 minutes until golden and bubbly.
- Let cool slightly before serving.
