- 4 Chicken Breasts
- 1 Cup Spinach (fresh or frozen)
- 1 Cup Artichoke Hearts (chopped and drained)
- 1 Cup Cream Cheese
- 1/2 Cup Sour Cream
- 1/2 Cup Grated Parmesan Cheese
- 2 Cloves Garlic (minced)
- 1 Lemon (juiced and zested)
- Salt and Pepper to Taste
- 1 Tablespoon Olive Oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Stir in spinach and artichoke hearts, cooking until spinach wilts, about 3 minutes.
- In a bowl, mix cream cheese, sour cream, Parmesan cheese, lemon juice and zest, salt, and pepper until smooth.
- Add the spinach and artichoke mixture into the cream mixture and combine well.
- Place chicken breasts in a baking dish and pour the creamy mixture over the chicken.
- Bake for 25-30 minutes, or until the chicken is cooked through and the top is golden.
- Serve warm.
Notes
Ensure the chicken reaches an internal temperature of 165°F (75°C). Adjust seasoning to taste before baking.
