Description

A quick and delicious bake combining tender chicken with a rich creamy sauce, fresh spinach, artichokes, and a zing of lemon.


Ingredients

  • 4 Chicken Breasts
  • 1 Cup Spinach (fresh or frozen)
  • 1 Cup Artichoke Hearts (chopped and drained)
  • 1 Cup Cream Cheese
  • 1/2 Cup Sour Cream
  • 1/2 Cup Grated Parmesan Cheese
  • 2 Cloves Garlic (minced)
  • 1 Lemon (juiced and zested)
  • Salt and Pepper to Taste
  • 1 Tablespoon Olive Oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Stir in spinach and artichoke hearts, cooking until spinach wilts, about 3 minutes.
  4. In a bowl, mix cream cheese, sour cream, Parmesan cheese, lemon juice and zest, salt, and pepper until smooth.
  5. Add the spinach and artichoke mixture into the cream mixture and combine well.
  6. Place chicken breasts in a baking dish and pour the creamy mixture over the chicken.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the top is golden.
  8. Serve warm.

Notes

Ensure the chicken reaches an internal temperature of 165°F (75°C). Adjust seasoning to taste before baking.
