Description

A delicious and nutritious recipe for keto-friendly stuffed bell peppers that are low in carbs and high in flavor.


Ingredients

  • 4 large bell peppers
  • 1 lb ground meat (beef, turkey, or chicken)
  • 8 oz cream cheese
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove their seeds.
  3. In a mixing bowl, combine the cooked ground meat, cream cheese, shredded cheese, diced tomatoes, garlic powder, onion powder, salt, and pepper.
  4. Stuff each bell pepper generously with the filling mixture, packing it in tightly.
  5. Place the stuffed peppers in a baking dish and cover them with foil. Bake for about 25-30 minutes or until the peppers are tender.
  6. Remove the foil and bake for an additional 10 minutes until the tops are golden and the filling is bubbling.
  7. Garnish with fresh parsley and serve immediately.
