- 1 lb Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 2 zucchinis, diced
- 2 cups fresh spinach, chopped
- 1 cup bone broth
- 1 can (14.5 oz) diced tomatoes
- 4 oz cream cheese
- 1 tsp oregano
- 1 tsp thyme
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 1–2 tbsp olive oil
- 1 bay leaf
Instructions
- Prep your ingredients: Chop onion, mince garlic, dice zucchinis, and chop spinach (5-8 minutes).
- Heat olive oil in a pot over medium-high heat and brown the sausage (6-8 minutes).
- Add onion and sauté until translucent, then add garlic (2-3 minutes).
- Pour in bone broth, diced tomatoes, oregano, thyme, cayenne, salt, and pepper; bring to a boil (3 minutes).
- Blend cream cheese with a cup of broth until smooth, then stir into the pot (3-4 minutes).
- Add zucchini and simmer until tender, then stir in spinach until wilted (2-3 minutes).
- Remove the bay leaf and let the soup rest before serving (2 minutes).
Notes
For a dairy-free option, substitute cream cheese with coconut cream. You can also add shredded chicken for extra protein.
