Description

A comforting, low-carb bowl of creamy Italian sausage soup that’s quick, budget-friendly, and packed with flavor.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 zucchinis, diced
  • 2 cups fresh spinach, chopped
  • 1 cup bone broth
  • 1 can (14.5 oz) diced tomatoes
  • 4 oz cream cheese
  • 1 tsp oregano
  • 1 tsp thyme
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 12 tbsp olive oil
  • 1 bay leaf

Instructions

  1. Prep your ingredients: Chop onion, mince garlic, dice zucchinis, and chop spinach (5-8 minutes).
  2. Heat olive oil in a pot over medium-high heat and brown the sausage (6-8 minutes).
  3. Add onion and sauté until translucent, then add garlic (2-3 minutes).
  4. Pour in bone broth, diced tomatoes, oregano, thyme, cayenne, salt, and pepper; bring to a boil (3 minutes).
  5. Blend cream cheese with a cup of broth until smooth, then stir into the pot (3-4 minutes).
  6. Add zucchini and simmer until tender, then stir in spinach until wilted (2-3 minutes).
  7. Remove the bay leaf and let the soup rest before serving (2 minutes).

Notes

For a dairy-free option, substitute cream cheese with coconut cream. You can also add shredded chicken for extra protein.
