- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups heavy cream
- 2 cups spinach or kale, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, cook the Italian sausage until browned.
- Add the diced onion and minced garlic; sauté until translucent.
- Stir in the chicken broth and diced tomatoes; simmer.
- Mix in the heavy cream; heat through.
- Add the spinach or kale, Italian seasoning, salt, and pepper; cook until wilted.
- Serve hot topped with grated Parmesan cheese.
Notes
For a thinner soup, add more chicken broth. It can be stored for 3-4 days in the refrigerator or frozen for up to three months.
