Description

A rich and creamy Italian Sausage Soup that’s easy to prepare and perfect for a comforting weeknight meal.


Ingredients

Scale
  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups heavy cream
  • 2 cups spinach or kale, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, cook the Italian sausage until browned.
  2. Add the diced onion and minced garlic; sauté until translucent.
  3. Stir in the chicken broth and diced tomatoes; simmer.
  4. Mix in the heavy cream; heat through.
  5. Add the spinach or kale, Italian seasoning, salt, and pepper; cook until wilted.
  6. Serve hot topped with grated Parmesan cheese.

Notes

For a thinner soup, add more chicken broth. It can be stored for 3-4 days in the refrigerator or frozen for up to three months.
