- 1 lb Italian sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 3 medium potatoes, diced
- 1 cup heavy cream
- 1 cup kale or spinach, chopped
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Cook sausage until browned, about 5 minutes.
- Add onion and garlic; sauté until soft.
- Pour in broth and add diced potatoes. Boil, then simmer until potatoes are tender.
- Stir in cream and greens; cook until heated through.
- Season with salt and pepper. Serve hot.
Notes
Can make it dairy-free by using coconut cream. Also, feel free to adapt with seasonal veggies.
