Description

A quick and easy creamy soup combining Italian sausage, potatoes, and fresh greens, perfect for a chilly evening.


Ingredients

Scale
  • 1 lb Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 medium potatoes, diced
  • 1 cup heavy cream
  • 1 cup kale or spinach, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Cook sausage until browned, about 5 minutes.
  3. Add onion and garlic; sauté until soft.
  4. Pour in broth and add diced potatoes. Boil, then simmer until potatoes are tender.
  5. Stir in cream and greens; cook until heated through.
  6. Season with salt and pepper. Serve hot.

Notes

Can make it dairy-free by using coconut cream. Also, feel free to adapt with seasonal veggies.
