Ingredients

- 1 cup lentils (green or brown)
- 1 cup mushrooms, sliced
- 2 cups kale, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot; sauté onions and garlic until translucent.

- Add lentils, chicken broth, thyme, salt, and black pepper; bring to a boil, then simmer for 25-30 minutes until lentils are tender.
