- 2 cups green beans, trimmed and cut
- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh herbs for garnish (optional)
Instructions
- Heat olive oil over medium heat. Sauté onions and garlic until translucent, about 3-4 minutes.
- Add potatoes and green beans. Stir for a few minutes to coat in oil.
- Pour in vegetable broth, bring to a boil, then simmer until tender, about 15-20 minutes.
- Use an immersion blender to puree until smooth or desired consistency.
- Stir in heavy cream and season with salt and pepper. Heat through without boiling.
- Serve hot, garnished as desired.
Notes
For a lighter version, consider using half-and-half or coconut milk. This dish can easily be doubled for larger gatherings.
