Description

A comforting soup that blends fresh green beans and hearty potatoes with a creamy base, perfect for warming up your day.


Ingredients

Scale
  • 2 cups green beans, trimmed and cut
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat olive oil over medium heat. Sauté onions and garlic until translucent, about 3-4 minutes.
  2. Add potatoes and green beans. Stir for a few minutes to coat in oil.
  3. Pour in vegetable broth, bring to a boil, then simmer until tender, about 15-20 minutes.
  4. Use an immersion blender to puree until smooth or desired consistency.
  5. Stir in heavy cream and season with salt and pepper. Heat through without boiling.
  6. Serve hot, garnished as desired.

Notes

For a lighter version, consider using half-and-half or coconut milk. This dish can easily be doubled for larger gatherings.
