- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 8 ounces mushrooms, sliced
- 1 cup wild rice, rinsed
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery and sauté until soft.
- Stir in garlic and mushrooms, cooking until mushrooms are tender.
- Add wild rice and chicken broth; bring to a boil.
- Reduce heat and simmer until wild rice is tender, about 45 minutes.
- Stir in shredded chicken, heavy cream, thyme, salt, and pepper; simmer for an additional 10 minutes.
- Garnish with chopped parsley before serving.
