Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 1 cup wild rice, rinsed
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery and sauté until soft.
  2. Stir in garlic and mushrooms, cooking until mushrooms are tender.
  3. Add wild rice and chicken broth; bring to a boil.
  4. Reduce heat and simmer until wild rice is tender, about 45 minutes.
  5. Stir in shredded chicken, heavy cream, thyme, salt, and pepper; simmer for an additional 10 minutes.
  6. Garnish with chopped parsley before serving.

Notes
