- 8 oz spaghetti
- 1 tbsp olive oil
- 2 chicken breasts, diced
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- Cook spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned.
- Add garlic and sun-dried tomatoes; sauté for a few minutes.
- Pour in heavy cream and bring to a gentle simmer.
- Stir in Parmesan cheese and dill, season with salt and pepper.
- Toss spaghetti into the sauce and combine.
- Serve hot, garnished with additional dill.
Notes
For a dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
