Ingredients

- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup orzo pasta
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
- Stir in the garlic, carrots, and celery, cooking until softened.
- Pour in the chicken broth and bring to a boil. Add the orzo and cook until al dente.
- Stir in shredded chicken and heavy cream, heating through.
- Add fresh dill, season with salt and pepper, and serve hot!
Notes
For a lighter version, use vegetable broth and coconut cream. The soup can be stored in airtight containers for up to 3 days in the refrigerator.
