Description

A deliciously creamy and savory soup featuring tender chicken, orzo pasta, and fresh dill, perfect for any season.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Stir in the garlic, carrots, and celery, cooking until softened.
  3. Pour in the chicken broth and bring to a boil. Add the orzo and cook until al dente.
  4. Stir in shredded chicken and heavy cream, heating through.
  5. Add fresh dill, season with salt and pepper, and serve hot!

Notes

For a lighter version, use vegetable broth and coconut cream. The soup can be stored in airtight containers for up to 3 days in the refrigerator.
