Ingredients

  • 4 boneless, skinless chicken breasts (approximately 6 oz each)
  • 2 cups sliced mushrooms
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 chopped onion
  • 2 cloves minced garlic
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prep your ingredients: Dice the onion and mince the garlic.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened (3-4 minutes).
  3. Season the chicken breasts with salt and pepper. Place them in the skillet and cook for 5-7 minutes on each side until browned and cooked through.
  4. Remove the chicken from the skillet. Add sliced mushrooms and cook until softened (about 5 minutes).
  5. Lower heat and stir in heavy cream and Dijon mustard. Simmer until sauce thickens, adjusting salt and pepper to taste.
  6. Return chicken to the skillet and coat with sauce. Simmer for an additional couple of minutes.
  7. Serve warm garnished with fresh parsley.
