- 4 boneless, skinless chicken breasts (approximately 6 oz each)
- 2 cups sliced mushrooms
- 1 cup heavy cream
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 chopped onion
- 2 cloves minced garlic
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prep your ingredients: Dice the onion and mince the garlic.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened (3-4 minutes).
- Season the chicken breasts with salt and pepper. Place them in the skillet and cook for 5-7 minutes on each side until browned and cooked through.
- Remove the chicken from the skillet. Add sliced mushrooms and cook until softened (about 5 minutes).
- Lower heat and stir in heavy cream and Dijon mustard. Simmer until sauce thickens, adjusting salt and pepper to taste.
- Return chicken to the skillet and coat with sauce. Simmer for an additional couple of minutes.
- Serve warm garnished with fresh parsley.
