Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 pound chicken breast, cubed
  • 8 ounces mushrooms, sliced
  • 6 cups chicken broth
  • 1 cup wild rice, rinsed
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery; sauté until softened.
  2. Stir in minced garlic and cook for 1 minute.
  3. Add chicken and mushrooms; cook until chicken is browned.
  4. Pour in chicken broth and add wild rice. Bring to a boil, then reduce heat and simmer for about 45 minutes until rice is tender.
  5. Stir in heavy cream and season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.
