- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 pound chicken breast, cubed
- 8 ounces mushrooms, sliced
- 6 cups chicken broth
- 1 cup wild rice, rinsed
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery; sauté until softened.
- Stir in minced garlic and cook for 1 minute.
- Add chicken and mushrooms; cook until chicken is browned.
- Pour in chicken broth and add wild rice. Bring to a boil, then reduce heat and simmer for about 45 minutes until rice is tender.
- Stir in heavy cream and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
