Description

A quick and easy version of the beloved creamy chicken madeira, perfect for weeknight dinners and packed with rich flavors.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup cremini or button mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon chopped fresh parsley
  • Optional: Cooked linguine or rice for serving

Instructions

  1. Season chicken breasts liberally with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes on each side until golden brown.
  3. Remove chicken from skillet and set aside.
  4. Add sliced mushrooms to the same skillet and sauté until browned and tender, about 5 minutes.
  5. Pour in Madeira wine and deglaze, scraping browned bits from the pan. Let simmer for a few minutes.
  6. Add chicken broth and heavy cream, stirring to combine. Return chicken to the skillet and cook until chicken is done through (165°F) and sauce thickens, about 10-15 minutes.
  7. Garnish with parsley before serving over linguine or rice, if desired.

Notes

For a healthier option, consider swapping heavy cream for half-and-half or use gluten-free pasta or rice as an alternative base.
