A quick and easy version of the beloved creamy chicken madeira, perfect for weeknight dinners and packed with rich flavors.

- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup cremini or button mushrooms, sliced
- 1 cup Madeira wine
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon chopped fresh parsley
- Optional: Cooked linguine or rice for serving
Instructions
- Season chicken breasts liberally with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes on each side until golden brown.
- Remove chicken from skillet and set aside.
- Add sliced mushrooms to the same skillet and sauté until browned and tender, about 5 minutes.
- Pour in Madeira wine and deglaze, scraping browned bits from the pan. Let simmer for a few minutes.
- Add chicken broth and heavy cream, stirring to combine. Return chicken to the skillet and cook until chicken is done through (165°F) and sauce thickens, about 10-15 minutes.
- Garnish with parsley before serving over linguine or rice, if desired.
Notes
For a healthier option, consider swapping heavy cream for half-and-half or use gluten-free pasta or rice as an alternative base.
