- 2 cups cooked chicken, shredded
- 4 slices bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- Grated parmesan cheese for serving
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Reserve the drippings.
- Remove the bacon, set it aside, and add the onions and garlic to the drippings; sauté until the onion is translucent.
- Pour in the chicken broth and bring to a simmer.
- Stir in the shredded chicken, spinach, and thyme; cook until the spinach is wilted, about 2-3 minutes.
- Lower the heat and stir in the heavy cream, cooking until heated through but not boiling.
- Season with salt and pepper to taste and serve hot, topped with crispy bacon and grated parmesan cheese.
Notes
Store leftovers in airtight containers in the refrigerator for up to 3 days, or freeze for up to 3 months.
