Description

A quick and delicious creamy soup packed with shredded chicken, crispy bacon, and fresh spinach that your whole family will adore.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Grated parmesan cheese for serving

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Reserve the drippings.
  2. Remove the bacon, set it aside, and add the onions and garlic to the drippings; sauté until the onion is translucent.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the shredded chicken, spinach, and thyme; cook until the spinach is wilted, about 2-3 minutes.
  5. Lower the heat and stir in the heavy cream, cooking until heated through but not boiling.
  6. Season with salt and pepper to taste and serve hot, topped with crispy bacon and grated parmesan cheese.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3 days, or freeze for up to 3 months.
