- 1 onion, chopped
- 2 stalks celery, chopped
- 2 large potatoes, diced
- 8 ounces mushrooms, sliced
- 4 cups vegetable broth
- 1 cup pasta (your choice)
- 1 cup heavy cream or milk
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and celery, cooking until softened.
- Stir in the potatoes and mushrooms, cooking for an additional 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the pasta and cook until tender, about 8-10 minutes.
- Reduce heat and stir in the cream or milk, simmering for a few more minutes.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
