Description

A velvety and nutritious soup that combines celery, potatoes, and mushrooms with pasta for a comforting meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 large potatoes, diced
  • 8 ounces mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup pasta (your choice)
  • 1 cup heavy cream or milk
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and celery, cooking until softened.
  2. Stir in the potatoes and mushrooms, cooking for an additional 5 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the pasta and cook until tender, about 8-10 minutes.
  5. Reduce heat and stir in the cream or milk, simmering for a few more minutes.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
