Description

A delicious and nutritious soup featuring cannellini beans and fresh spinach, perfect for a comforting meal.


Ingredients

Scale
  • 1 can of cannellini beans (drained and rinsed)
  • 4 cups of vegetable broth
  • 2 cups of fresh spinach
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of lemon juice
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Breadcrumbs for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté chopped onion and minced garlic until softened, about 5 minutes.
  2. Add drained cannellini beans and vegetable broth, and bring to a simmer for 10 minutes.
  3. Stir in fresh spinach and lemon juice, cooking until spinach is wilted, about 3-5 minutes.
  4. Season with salt and pepper, and blend for a smoother consistency if desired.
  5. In a separate pan, toast breadcrumbs with olive oil and minced garlic until golden brown.
  6. Serve the soup hot, garnished with the lemon-garlic breadcrumbs.

Notes

For added flavor, swirl a little olive oil on top before serving.
