- 4 cups broccoli florets
- 1/2 cup shredded carrots
- 1/2 cup red onion, finely chopped
- 1/2 cup dried cranberries or raisins
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
- 1/4 cup sunflower seeds (optional)
Instructions
- Prep your ingredients by washing and chopping the broccoli into small florets.
- In a large bowl, add the broccoli florets, shredded carrots, finely chopped red onion, and dried cranberries. Toss to mix.
- In a small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
- Pour the dressing over the vegetable mixture and toss gently until everything is evenly coated.
- If desired, sprinkle sunflower seeds on top for added crunch.
- Cover the bowl and refrigerate for at least 30 minutes before serving.
