- 4 boneless, skinless chicken breasts
- 1 cup cranberry sauce
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the cranberry sauce, soy sauce, brown sugar, and Dijon mustard until well blended.
- Season both sides of the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish, and pour the cranberry glaze over the top.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (165°F internal temperature).
- Serve warm, garnished with freshly chopped herbs if desired.
