Description

A delicious and quick recipe that combines sweet tart cranberry sauce with succulent chicken, perfect for weeknights or special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cranberry sauce
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cranberry sauce, soy sauce, brown sugar, and Dijon mustard until well blended.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish, and pour the cranberry glaze over the top.
  6. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (165°F internal temperature).
  7. Serve warm, garnished with freshly chopped herbs if desired.
