- 4 chicken breasts
- 8 oz brie cheese
- 1 cup fresh cranberries
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon orange juice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 cup panko breadcrumbs
- 1 tablespoon melted butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a saucepan, heat olive oil, add cranberries, and cook until softened. Stir in honey, orange juice, cinnamon, and ginger, cooking until thickened.
- Cut a pocket into each chicken breast and stuff with brie and cranberry mixture. Secure with toothpicks.
- Sear stuffed chicken in a skillet over medium-high heat for 2-3 minutes on each side until golden brown.
- Spread panko breadcrumbs mixed with melted butter over the stuffed chicken. Bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before serving.
Notes
Serve on a bed of sautéed spinach or alongside seasonal vegetables for added color.
