A delightful combination of succulent chicken breasts, creamy brie, and a tart cranberry filling that brings elegance to any dinner table.


Ingredients

  • 4 chicken breasts
  • 8 oz brie cheese
  • 1 cup fresh cranberries
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon orange juice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, heat olive oil, add cranberries, and cook until softened. Stir in honey, orange juice, cinnamon, and ginger, cooking until thickened.
  3. Cut a pocket into each chicken breast and stuff with brie and cranberry mixture. Secure with toothpicks.
  4. Sear stuffed chicken in a skillet over medium-high heat for 2-3 minutes on each side until golden brown.
  5. Spread panko breadcrumbs mixed with melted butter over the stuffed chicken. Bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before serving.

Serve on a bed of sautéed spinach or alongside seasonal vegetables for added color.
