- 4 boneless, skinless chicken breasts
- 1 cup cranberry sauce
- 8 oz Brie cheese, sliced
- 2 tbsp olive oil
- Salt and pepper, to taste
- 2 cloves garlic, minced
- Toothpicks, for sealing
Instructions
- Preheat oven to 400°F (200°C) and pat dry chicken breasts.
- Cut a horizontal pocket into each chicken breast without cutting all the way through.
- Stuff each pocket with 1–2 tablespoons of cranberry sauce and slices of Brie; seal with toothpicks.
- Season the outside of each breast with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 2–3 minutes per side until golden brown.
- Transfer seared chicken to an oven-safe baking dish, sprinkle with garlic, and bake for 20-25 minutes until cooked through.
- Let chicken rest for 5–7 minutes before removing toothpicks and serving.
Notes
For a crunchier finish, top with breadcrumbs before baking.
