Description

Indulge in this elegant Cranberry Brie Stuffed Chicken, blending sweet-tart cranberry sauce and creamy Brie for a showstopping weeknight meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cranberry sauce
  • 8 oz Brie cheese, sliced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • Toothpicks, for sealing

Instructions

  1. Preheat oven to 400°F (200°C) and pat dry chicken breasts.
  2. Cut a horizontal pocket into each chicken breast without cutting all the way through.
  3. Stuff each pocket with 1–2 tablespoons of cranberry sauce and slices of Brie; seal with toothpicks.
  4. Season the outside of each breast with salt and pepper.
  5. Heat olive oil in a skillet over medium-high heat and sear chicken for 2–3 minutes per side until golden brown.
  6. Transfer seared chicken to an oven-safe baking dish, sprinkle with garlic, and bake for 20-25 minutes until cooked through.
  7. Let chicken rest for 5–7 minutes before removing toothpicks and serving.

Notes

For a crunchier finish, top with breadcrumbs before baking.
