Description

A healthy yet decadent ribeye roast recipe featuring cranberry sauce and balsamic vinegar, perfect for any occasion.

Ingredients

Scale
  • 1 ribeye roast (34 pounds)
  • 1 cup cranberry sauce (homemade or store-bought)
  • 1/2 cup balsamic vinegar
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh rosemary for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix cranberry sauce, balsamic vinegar, minced garlic, olive oil, salt, and pepper.
  3. Rub the ribeye roast with the mixture, ensuring it’s well coated. Place it in a roasting pan, cover it with foil.
  4. Roast for about 1.5 to 2 hours until it reaches your desired doneness, basting occasionally.
  5. Remove from the oven and let it rest for 10-15 minutes before slicing. Serve garnished with fresh rosemary.

Notes

Marinate the ribeye the night before for deeper flavors. Use a meat thermometer to ensure the perfect doneness.
