- 1 ribeye roast (4–5 pounds)
- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix cranberry sauce, balsamic vinegar, olive oil, garlic, rosemary, salt, and pepper.
- Place the ribeye roast in a roasting pan and pour the cranberry mixture over it, ensuring it’s well coated.
- Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from the oven and let it rest for 15 minutes before slicing.
- Serve with the pan juices drizzled over the sliced roast.
