Description

A comforting and adaptable potato soup that blends rich flavors and creamy textures, perfect for any cozy meal.


Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 1 large onion, diced
  • 2 stalks celery, chopped
  • 4 cups chicken or vegetable stock
  • 1 cup milk or cream
  • 3 tablespoons butter
  • Salt to taste
  • Black pepper to taste
  • Optional garnishes: crispy bacon, chives, shredded cheese, sour cream

Instructions

  1. Prep the ingredients: dice the onions, chop the celery, and cube the potatoes.
  2. Melt butter in a heavy-bottomed pot over medium heat.
  3. Add onions and celery; sweat until translucent (5-7 minutes).
  4. Add cubed potatoes and cover with stock; bring to a simmer.
  5. Reduce heat and cook until potatoes are tender (30-40 minutes).
  6. Remove 1-2 cups of potatoes, mash, and return to pot for texture.
  7. Stir in milk or cream, adjust seasoning, and serve with garnishes.

Notes

For a vegan version, substitute olive oil for butter and use cashew cream instead of dairy.
