- 4 large russet potatoes, peeled and cubed
- 1 large onion, diced
- 2 stalks celery, chopped
- 4 cups chicken or vegetable stock
- 1 cup milk or cream
- 3 tablespoons butter
- Salt to taste
- Black pepper to taste
- Optional garnishes: crispy bacon, chives, shredded cheese, sour cream
Instructions
- Prep the ingredients: dice the onions, chop the celery, and cube the potatoes.
- Melt butter in a heavy-bottomed pot over medium heat.
- Add onions and celery; sweat until translucent (5-7 minutes).
- Add cubed potatoes and cover with stock; bring to a simmer.
- Reduce heat and cook until potatoes are tender (30-40 minutes).
- Remove 1-2 cups of potatoes, mash, and return to pot for texture.
- Stir in milk or cream, adjust seasoning, and serve with garnishes.
Notes
For a vegan version, substitute olive oil for butter and use cashew cream instead of dairy.
