- 1 lb boneless, skinless chicken breasts
- 1 can (28 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup grated Parmesan cheese
- Chopped fresh parsley for garnish
- Cooked pasta or gnocchi (optional)
Instructions
- Prep your ingredients: Dice onions and mince garlic.
- Combine all ingredients (chicken, tomatoes, broth, onion, garlic, spices) in the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken and return it to the crockpot.
- Add heavy cream and Parmesan cheese; stir well.
- Cook for an additional 30 minutes and serve garnished with parsley.
Notes
For a smoother soup, consider using an immersion blender before serving. You can also customize with seasonal vegetables.
