Description

A hearty, delicious soup made with tender chicken, rich tomatoes, and creamy Parmesan, cooked conveniently in a crockpot.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (28 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish
  • Cooked pasta or gnocchi (optional)

Instructions

  1. Prep your ingredients: Dice onions and mince garlic.
  2. Combine all ingredients (chicken, tomatoes, broth, onion, garlic, spices) in the crockpot.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Shred the chicken and return it to the crockpot.
  5. Add heavy cream and Parmesan cheese; stir well.
  6. Cook for an additional 30 minutes and serve garnished with parsley.

Notes

For a smoother soup, consider using an immersion blender before serving. You can also customize with seasonal vegetables.
