Description

This high-protein Cottage Cheese Chocolate Mousse is a creamy and rich dessert with a light texture, made without heavy cream.


Ingredients

Scale
  • 340 g (12 oz; about 1 1/2 cups) cottage cheese
  • 30 g (1/4 cup) plain unsweetened cocoa powder
  • 56 g (2 oz) dark chocolate, melted and cooled
  • 60 ml (1/4 cup) maple syrup or honey
  • 1 tsp (5 ml) vanilla extract
  • 1/8 tsp salt
  • 2 large egg whites (about 60 g) or 60 ml (1/4 cup) aquafaba
  • 15 ml (1 tbsp) neutral oil or melted unsalted butter
  • Optional: 1 scoop (20–25 g) unflavored whey protein

Instructions

  1. Melt the chocolate by chopping it and placing it in a heatproof bowl. Melt gently over a saucepan of simmering water or in the microwave, stirring until smooth.
  2. Blend the cottage cheese, maple syrup, cocoa powder, vanilla, neutral oil, and salt in a high-speed blender until smooth.
  3. Temper in the melted chocolate by streaming it into the blended mixture while the blender runs on low.
  4. Whip the egg whites or aquafaba with an electric mixer until soft peaks form.
  5. Fold in one-third of the whipped whites to loosen the base, then fold in the remaining whites until no streaks remain.
  6. Portion the mousse into serving dishes and chill in the refrigerator for at least 1 hour.

Notes

Make-ahead: Prepare the mousse up to 24 hours in advance and chill. Use pasteurized egg whites or aquafaba if serving to vulnerable guests.
