These Cookie Dough Brownies combine rich brownie layers with creamy cookie dough on top.

- For the Brownie Layer:
- 1/2 cup unsalted butter (1 stick)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- For the Cookie Dough Layer:
- 1/2 cup unsalted butter (softened)
- 1/2 cup brown sugar (packed)
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
- 2 tablespoons milk (optional, for consistency)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a medium saucepan, melt the 1/2 cup of unsalted butter over low heat.
- Remove from heat and stir in the granulated sugar, eggs, and vanilla extract until well combined. Add the cocoa powder, flour, salt, and baking powder. Mix until just combined and smooth.
- Pour the brownie batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool in the pan.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the vanilla extract and mix well.
- Gradually mix in the flour and salt until just combined. If the dough is too crumbly, add milk a tablespoon at a time until it reaches a smooth consistency.
- Gently fold in the mini chocolate chips.
- Once the brownie layer has cooled, spread the cookie dough evenly over the top of the brownies.
- If desired, refrigerate the brownies for about 30 minutes to firm up the cookie dough layer.
