Description

A warm, shareable dish that elevates the classic Reuben sandwich into a comforting bake filled with layers of rye bread, corned beef, sauerkraut, and gooey Swiss cheese.

Ingredients

Scale
  • 1 loaf of rye bread, cubed
  • 1 pound corned beef, shredded
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup Thousand Island dressing
  • 4 large eggs
  • 2 cups milk
  • Salt and pepper to taste

Instructions

  1. Prep Your Ingredients: Cube rye bread into 1-inch pieces.
  2. Create Layers: In a greased baking dish, layer half of the cubed rye, corned beef, sauerkraut, and cheese. Drizzle with half the dressing. Repeat layers.
  3. Mix the Egg Mixture: Whisk together eggs, milk, salt, and pepper in a separate bowl.
  4. Bake to Perfection: Pour the egg mixture over the casserole. Cover and bake for 30 minutes, then uncover and bake for an additional 15 minutes.
  5. Serve and Enjoy: Let cool for 5 minutes before serving.

Notes

For best texture, use day-old bread. Cover during baking to prevent over-browning.
