Description

A hearty and traditional Irish stew made with corned beef, vegetables, and aromatic spices, perfect for family dinners.


Ingredients

  • 2 lbs corned beef
  • 4 cups water
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 1 small head of cabbage, chopped
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, combine the corned beef, water, onion, garlic, peppercorns, and bay leaves. Boil, then simmer for 2 hours.
  2. Remove corned beef and add carrots and potatoes. Cook for 15 minutes.
  3. Stir in cabbage and continue cooking for 10-15 minutes until tender.
  4. Slice beef against the grain and serve with vegetables, garnished with parsley.
