Ingredients

- 2 lbs corned beef
- 4 cups water
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon black peppercorns
- 2 bay leaves
- 4 medium carrots, sliced
- 4 medium potatoes, diced
- 1 small head of cabbage, chopped
- Salt to taste
- Fresh parsley for garnish
Instructions
- In a large pot, combine the corned beef, water, onion, garlic, peppercorns, and bay leaves. Boil, then simmer for 2 hours.
- Remove corned beef and add carrots and potatoes. Cook for 15 minutes.
- Stir in cabbage and continue cooking for 10-15 minutes until tender.
- Slice beef against the grain and serve with vegetables, garnished with parsley.
