Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup onions, chopped
  • 2 cups green beans, cut
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot and brown the beef.
  2. Add onions and garlic; sauté until translucent.
  3. Pour in the beef broth and bring to a boil.
  4. Add carrots, potatoes, green beans, salt, pepper, thyme, and bay leaf.

  6. Remove bay leaf and serve.
