- 4 chicken thighs
- 2 large onions, thinly sliced
- 3 garlic cloves, minced
- 1 cup apple cider
- 2 cups chicken broth
- 1 tablespoon fresh thyme
- Salt and pepper to taste
Instructions
- Heat olive oil or butter in a large skillet over medium heat. Add onions, stirring occasionally until caramelized, about 10-15 minutes.
- Stir in minced garlic and sauté for an additional minute until fragrant.
- Push onions to the side, add chicken thighs, and sear until golden brown on both sides, about 3-4 minutes each side.
- Pour in the apple cider and chicken broth, adding thyme, salt, and pepper. Bring to a simmer, cover, and cook for 30-40 minutes or until chicken is cooked through and tender.
- Serve warm, spooning caramelized onions and broth over the chicken.
Notes
For perfectly caramelized onions, cook them low and slow to achieve the best flavor.
