Description

Ingredients

  • 2 tablespoons olive oil or butter
  • 4 chicken thighs
  • 2 large onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 cup apple cider
  • 2 cups chicken broth
  • 1 tablespoon fresh thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat. Add onions, stirring occasionally until caramelized, about 10-15 minutes.
  2. Stir in minced garlic and sauté for an additional minute until fragrant.
  3. Push onions to the side, add chicken thighs, and sear until golden brown on both sides, about 3-4 minutes each side.
  4. Pour in the apple cider and chicken broth, adding thyme, salt, and pepper. Bring to a simmer, cover, and cook for 30-40 minutes or until chicken is cooked through and tender.
  5. Serve warm, spooning caramelized onions and broth over the chicken.
