- 1 3/4 cups all-purpose flour
- 3/4 cup cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup unsalted butter, room temperature
- 1 1/4 cups Truvia® Sweet Complete™ All-Purpose Sweetener
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 cup sour cream
- 2 cups Truvia® Confectioners sweetener
- Edible food coloring
- Edible pearls and metallic dust for decorating
Instructions
- Preheat oven to 350°F (175°C). Line muffin tin with cupcake liners.
- Sift together flour, cocoa powder, salt, baking powder, and baking soda.
- In a large bowl, beat butter with Truvia® Sweet Complete™ until light and fluffy.
- Add eggs one at a time, then mix in vanilla extract.
- Alternately add dry ingredients and milk into butter mixture, beginning and ending with dry ingredients. Mix in sour cream until smooth.
- Fill cupcake liners about two-thirds full with batter.
- Bake for 20-22 minutes, or until a toothpick comes out clean.
- Cool cupcakes in the pan for 5 minutes before transferring to a wire rack.
- For frosting, beat butter until creamy, then gradually add Truvia® Confectioners sweetener, vanilla, and salt until smooth.
- Divide frosting and tint with gel colors to resemble ornaments. Frost cooled cupcakes and add decorations as desired.
Notes
For a glossy look, brush piped frosting with a thin layer of diluted light apricot jam.
